Steak-frites with mushroom sauce

Preparation time: 15 minutes
Cooking time: 20 minutes
Serves: 4

A weekday standard. If you feel fancy you could make the chips yourself by cutting large potatoes into matchsticks, but that would increase the preparation time, and chips are as cheap as…chips. The trick to making this a quick meal to prepare is multi-tasking, so make sure you read through the whole recipe before you start.


  • 4 serving-sized steaks

  • 1 tbsp olive oil (for the steaks)

  • 500g frozen matchstick fries

  • 200g button mushrooms

  • 1 tbsp butter

  • 1 tsp olive oil (for the sauce)

  • 3 cloves garlic

  • 150ml thickened cream

  • ¼ tsp truffle oil (optional)

  • ½ sprig continental (flat-leafed) parsley

  • 300g green beans

  • ¼ tsp salt


  1. Pre-heat the oven to 180 degrees. Lay the chips out in a single layer on a couple of baking trays ready to go into the oven.

  2. Pull off the parsley leaves, and discard the stalks. Top and tail the green beans.

  3. Meanwhile, slice the mushrooms. Peel and finely slice the garlic. Melt the butter with the olive oil in a large saucepan over medium heat. Add the garlic and fry, stirring, until you can smell the fragrance, then immediately add the mushrooms. Stir to coat.

  4. Fry until the mushrooms soften and release some of their liquid, then add the cream and the parsley. Add the truffle oil and reduce the heat to very low. Keep an eye on it, occasionally stirring as you make the rest of the meal; turn the heat off once it reaches a consistency almost as thick as you want it (the residual heat will thicken it slightly more).

  5. Put the green beans in a steamer with an inch of boiling water between them.

  6. Put the chips in the oven and set the timer for 12 or 15 minutes (check the instructions on the packet).

  7. Heat the oil for the steaks on a frypan on high heat. When the oil is very hot (but not smoking), add the steaks. For rare steak (which is the only way to eat steak), just let them fry for a minute or two each side, then immediately remove from the heat.

  8. During these minutes, check on the green beans; remove them from the heat as soon as they yield to a poke with a fork. Stack the steaks up so they retain their warmth, and remove the chips from the oven when the timer goes.

  9. You might need to warm the sauce for a few seconds before serving. Pour it over the steaks and serve with the chips and green beans.
